Summer is the best time of year to get salad inspiration! My top recommendation, especially if you’re not a salad person to begin with, is to simplyy search Pinterest for quick and easy summer salads.
Over the course of this summer I’ll be sharing with you some of my tried and true go to salads!
It is so handy to have a list of exciting side salads for when you are invited to that next BBQ or hosting your own backyard party!
Strawberry Kale Salad
Ingredients:
1/2 cup olive oil
1/3 Apple cider vinegar
1 TBSP honey
1/4 tsp Unrefined Salt
1 Large bunch of kale
2 cups sliced fresh stawberries (or frozen if you don’t have any fresh ones on hand)
3/4 cup minced fresh mint
1/2 cup crumbled feta
1/4 slivered almonds (optional)
Crumbled bacon (optional)
Instructions
To prepare kale trim it from its stem and cut into bite size pieces. Wash and pat dry
Put Kale, mint, strawberries, and feta in a bowl. Add bacon and almonds if suing.
Mix the oil, vinegar, honey and salt together to make the dressing. Top the salad with half the dressing, toss and add more dressing right away or before serving.
Notes
This salad is best prepared a few hours before eating. I like it when the kale has had a chance to soften from the dressing.
You don’t have to use mint, I used to leave it out because I rarely had it on hand but it does add a bright pop of flavor to the salad!
