Another easy summer salad! If you have extra homegrown cucumbers and tomatoes on hand their flavors will contribute a lot to this mix. The amounts of each item in this salad are completely variable. If you want to use up more cucumbers throw more in, if you have less quinoa then use less. If you don’t eat much dairy then just lightly top with feta. It is all up to your preference and the amounts I have listed here are just a starting point.
Ingredients
2 cups cooked quinoa
1-2 cups tomatoes cubed
1-2 cups cucumber diced
1/4 cup black olives slivered
1/2 cup feta cheese
1/4 cup sun-dried tomatoes in olive oil
Dressing
2 TBS apple cider vinegar
1/2 cup olive oil
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp thyme
1/2 tsp basil
1/2 tsp oregano
1/2 tsp salt
1/2 tsp black pepper
Instructions
Combine all of the salad ingredients and mix gently.
In a glass jar combine all of the dressing ingredients and shake.
Pour your desired amount of dressing on the salad and mix. The amount of dressing you use will vary depending on if you added extra veggies or more or less quinoa.
Adjust to taste and enjoy!
